The vineyards are breed to espalier with a density of 4500 plants for hectare.
YIELD AVERAGE
65 q. of grapes for hectare.
HARVEST
The grapes is harvest manually, the Chardonnay on August, the Insolia on the second decade of Setember.
THE WINEMAKING
Cryomaceration of the peels for 12 hours at the temperature of 4-5 °C, after the soft pressing and fermentation with controlled temperature of 18°C. The cryomaceration is made in steel inox tanks, as the refinement of the yeasts, for a better wine’s structure. Shades of yellow color, intense fruity bouquet, dry taste, mellow, full-bodied, with a long aromatic persistence.
